Rioja whites with freshness in their DNA

NIVARIUS

Altitudes above 800 metres, a northern orientation and the influence of the continental climate are the basis on which our winery farms are built, a Latin term that defines the natural well where the snow was kept all year round.

Nivarius is freshness and, if we talk about wine, fresh fruit and natural acidity, essential elements of wines with character and storage capacity. But it is also a heritage recovery project. Thus, the Maturana blanca, a variety that was practically extinct in the territory, is one of our mainstays, along with the old vines of viura and Garnacha blanca that are scattered in headlands of red vineyards.
We also work passionately with Tempranillo Blanco, a variety that the winery is finding increasingly expressive and attractive.

To this end, we seek out privileged territories capable of producing inimitable wines, where minimal intervention is required and where honest agriculture is carried out with respect for biodiversity.
This completes a way of working that always pursues the best expression of the territory and an honest elaboration with the raw material. In this way, the aromas and flavours of the best Riojan whites are enhanced, giving meaning to Nivarius.

EDICIÓN LIMITADA

Old vine Viura grown on the Moncalvillo slopes and Alto Najerilla blended with Maturana Blanca from Las Arcas vineyard in Nalda produce a powerful white wine that is aged in large wooden casks. The result is a structured, full-bodied and very expressive wine bursting with fruit notes that gains complexity after some time in the glass.

VALDESABRIL

From the Alto de Najerilla, in an elevated area between Badarán and Baños de Río Tobías, we discovered, almost by chance, these unique plots of old vines of Viura and poor sandy soils partially degraded with limestone chips from the mother rock.

By and for the white wine The obsession of the winery is the search for the freshness and longevity of white wines and for this we have the best technology in the production. We vinify each small plot separately, from the entrance of the grapes, either by selection table in boxes of 18 kg or by reception hopper. The way in which the grapes enter the winery depends on their state of health and the destination of the grapes.

One of the most important elements of the winery are the pneumatic inert dams, made with a membrane that injects nitrogen to prevent the must from oxidising. In this way we respect the character of the variety and the peculiarities of the estate.
Production and ageing In a normal year we can have up to 20 different vinifications depending on the variety, estate or area where our grapes come from. In this way we get exactly what we want from our wines, which is the maximum expression of their terroir.

We make almost all of our wines in 3,500 litre oak casks from Normandy with a very light toasting so that the varietal and mineral character of our native varieties produces unique and respectful, complex and expressive wines, which have a great longevity thanks to the extraordinary acidity levels with which we work.
