DENOMINATION OF ORIGIN:
The vineyards, which are trained in high goblet vines, are located at altitudes between 580 and 650 metres above sea level in San Vicente de la Sonsierra.
El Codo, La Peña, Cerro Las Espinilla and La Liende estates.
Poor limestone soils at depth, very degraded with rocks of sedimentary origin on the surface. This type of soil offers us a long ageing wine, with silky tannins reminiscent of chalk, fresh and with volume.
100% Tempranillo wine, selection of old clones from the area.
Manual harvest in boxes. Production with 20% of whole grapes selected and crushed in the traditional manner. The rest is destemmed and crushed, after which the grapes ferment with the vineyard's own yeasts. The work with the cap is carried out only by punching down. Malolactic fermentation in 225L French oak barrels, with weekly battonage.
24 months in French oak barrels. Assemblage in 4000 litre concrete vats 6 months later.
