NIVARIUS RESERVA

From a very cool vintage. Slightly early budding, accompanied by a summer with regular rainfall, meant that the quantity of grapes was generous. Grapes with a lot of freshness and finesse and at the same time delicate. During the ripening period we had a favourable climate with contrasting temperatures during the night, with a cool ripening and a slightly higher production than the average of the year.

DENOMINATION OF ORIGIN:
D.O.Ca Rioja.

VINEYARD AREA:
Selection of goblet-trained Viura vineyards in the Sonsierra, Moncalvillo and Alto Najerilla hillsides.

VINEYARD ALTITUDE:
Average age of 70 years for old vines located between 500 and 700 metres above sea level.

SOILS:
Mainly silt-limestone on the northern slope, Sonsierra. Ferrous sand with a little clay in depth on the southern slopes of the Ebro valley, Moncalvillo area and further west in the Najerilla, deep soils with degraded sandy component mixed with layers of gypsum, this mixture gives us structure, freshness, volume and length in the wine.

VARIETIES:
100% Viura.

ELABORATION:
Harvest at optimum aromatic maturity. Light pressing, in the absence of oxygen, fermentation with indigenous yeasts in oak barrels. The first three months the battonage technique is used twice a week and then the wine is aged statically on the fermentation lees for 12 months.

AGEING:
A minimum of 12 months of ageing in barrels, with the lees from the second fermentation. It is made in French oak barrels with 15% new barrels and the rest is used between 2 and 8 uses.

ALCOHOL
13,5%.
