VINEYARD AREA
The wine originates from Finca La Esperilla, our vineyard planted using the bush-trained method in 1974, situated at the foot of Clavijo Castle. It is a legendary vineyard; vines have always grown here, making it an ancient vineyard site.
SOILS
We start with a capricious natural environment. Mainly ferrous sandy soils, accompanied by glacial stones on the surface, with a higher silt content and calcareous deposits for Tempranillo, and a higher percentage of clay in the case of Garnacha and Mazuelo.
ALCOHOL
13.5%.
GRAPE VARIETIES
A wine made from 50% Tempranillo, 30% Garnacha and 20% Mazuelo.
PRODUCTION
All grape varieties are harvested by hand at the same time, without destemming. Traditional pressing is carried out using a vertical press, yielding only 50 per cent must, in keeping with the principles of the cuvée.
Fermentation is carried out by indigenous yeasts in used French oak barrels, with the battonage technique being applied periodically throughout the fermentation and ageing process.
AGEING
18 months in French oak barrels in their fourth year, followed by a minimum of 6 months’ bottle ageing.
